[COMMON] Fix array variables increments
pointed out by checkbashisms in docker-entrypoint.sh - migrate to straight strings the arrays used to pass options Arrays are supported in bash but are not POSIX compliant. - remove useless double quotes in variables used to pass options Double quotes are often used to avoid globbing and word splitting.
